Lipedema food diary - Today it's that time again and we dedicate ourselves to nutrition.
breakfast
Cheesecake with cherries - for 4 large servings: 1 kilo low-fat quark, 4 eggs, 1 pg vanilla pudding, 125 ml milk, sweetener or sweeteners your choice, 200 g cherries
Separate the eggs and beat the egg white until stiff. Mix the remaining ingredients (except for the cherries) to a creamy mass and fold in the egg whites. Now you fill the dough in a silicone baking pan and garnish it with cherries. Bake at 180 ° (fan oven) for about 60 minutes. If necessary, cover with a little baking paper.
Lunch
Carrot and parsnip soup - for a large portion: 150 g carrots, 150 g parsnip, half a stick of leek, 40 g couscous, 300 ml vegetable stock
Clean and chop the vegetables. Simmer for 12 minutes with the broth and spices of your choice (I like to use garlic with garlic). Add the couscous and simmer for another 5 minutes. Here you can vary the vegetables depending on the season. I think broccoli is also great - I also like to use frozen food.
Dinner and breakfast
Pasta basta! Ingredients for 2 servings: 120 g pasta, 250 g minced turkey, 1 carrot, 1 bell pepper, 50 g peas, 1 ziwebel, 500 ml tomato puree
Cook the pasta in salted water. Brown the minced turkey with the finely chopped onion. Salt and pepper. Chop the remaining vegetables and add them. Briefly sauté. Deglaze with the tomatoes and let simmer on a low flame for 15 minutes. Season the sauce to taste and serve with the pasta and some parmesan (approx. 10 g).
Snack - Cucumber, apple and lots of water!
