Some time ago I made myself a bulgur salad for my lunch break at work. I love this type of salad because it can be varied to suit your mood. You can add everything you like or leave out what you don't like.
Ingredients for 2 persons
- 1 cup of bulgur
- 2 1/2 cups vegetable broth
- 2 EL tomato paste
- 1 1/2 tbsp balsamic vinegar
- 1 tbsp olive oil
- lemon juice
- salt
- pepper

- 1 peppers
- 1 onion
- about a handful of cocktail tomatoes
- 1 pk. Herder cheese

Preparation of bulgur salad
Bring the vegetable stock to the boil and stir in the bulgur. Remove the pan from the heat and cover the bulgur for about 25 minutes, until it is soft. Drain the excess vegetable stock. However, it also says on every package how long the bulgur has to swell. Because it can vary a bit from brand to brand.
Stir the tomato paste, lemon juice, balsamic vinegar and olive oil until smooth and mix with the bulgur. Dice the tomatoes, peppers (clean beforehand and remove the seeds) and onions. Mix everything with the bulgur and let it steep. Then season with salt and pepper and sprinkle with feta and herbs.
The salad can be prepared the evening before and taken with you in a storage jar the next day.
